Throughout the experience, you’ll work with fresh, carefully selected ingredients chosen to reflect seasonality and highlight the true flavors of the region. From the very beginning, you’ll dive into Tuscan cuisine by preparing fresh handmade pasta. You’ll learn how to create the famous pici, a rustic, hearty pasta that embodies the spirit of rural tradition, paired with the fragrant and bold aglione sauce—a recipe rich in character and history.
Next, you’ll move on to another iconic dish: tagliatelle al ragù. Here, you’ll discover how to achieve the perfect dough consistency and how to balance ingredients to create a rich, enveloping sauce that enhances every bite.
The journey continues with a traditional Tuscan main course. You’ll have the chance to prepare either a succulent roast or the renowned peposo di Chianina, a deeply flavorful, peppery dish rooted in the traditions of brickmakers and now a true symbol of regional cuisine. Through these preparations, you’ll learn essential cooking techniques and the importance of patience and timing in the kitchen.
No Italian culinary experience would be complete without dessert. You’ll try your hand at two timeless classics: cantucci, crisp and irresistible biscuits perfect to end a meal, and the iconic tiramisù, one of the most beloved desserts in the world. The chef will guide you in achieving the perfect texture, balance of flavors, and a flawless presentation.
This is a fully hands-on experience—far from a simple demonstration. Each participant will take an active role, with plenty of opportunities to ask questions, interact with the chef and learn those small but crucial tips that turn a good recipe into an unforgettable dish.
At the end of the class comes the most rewarding moment: the tasting. Seated together in a relaxed and convivial atmosphere, you’ll enjoy all the dishes you’ve prepared with your own hands.
